Easter Simnel Cake

Simnel Cake Easter |the foodiesway.co.uk This delicious simnel cake is the perfect bake with which to celebrate Easter. Rich, fruity and spiced with a layer of gooey marzipan in its centre, and eleven balls of marzipan on top represent the disciples of Jesus, minus Judas. This version also has a marzipan ‘nest’ with tiny chocolate eggs snuggled at the centre.

This is the very first simnel cake I have made, and I chose Mary Berry’s classic recipe to follow, adapted very slightly by using a smaller cake tin, to give a taller bake. I also made a batch of her hot cross buns, also intending to write a post on those, but they were all devoured the very morning they were made! There is little that can beat the aroma of hot cross buns toasting in the oven. Smothered in butter with a cup of hot coffee, they are a gorgeous treat at Easter.

These pecan, maple and cranberry energy balls are the answer to my afternoon-pick-me-up prayers. Whizzing up a batch of these every week has become an essential part of my foodie routine. These tiny balls of goodness are my go-to for a pre-workout boost, or with a hot cup of coffee in the afternoon, when I just need…something.

The juicy cranberries give a tangy sweetness, whilst the maple syrup and nutty pecan flavours sing through. I know this is a rather festive combination as we are about to enter spring, but trust me, they taste so good it doesn’t matter one bit. The fudgy dates and raw cacao adds to the glorious sensation that you are having something naughty, when actually it is wonderfully good for you!

Cherry + Amaretto Cupcakes and The Foodie Month: March

These cherry and amaretto cupcakes are a seriously indulgent treat. I baked them for Mother’s Day, as cherry is one of my Mum’s favourite flavours. I didn’t manage to post the recipe in time for Mother’s Day, but thankfully these sweet little bakes are a gorgeous gift to give (or indulge in yourself!) any time of the year.

Cherries are in season from July to August, so I did cheat a bit this time in the name of Mother’s Day! You could substitute the fruit, preserve and liquor depending on the season. You could try cranberry and cognac in winter, or blackberries with blackberry liqueur in autumn, or summer fruits soaked in a floral, citrus sweet wine, such as Torres Floralis Moscatel Oro (I’ve tried it – it’s wonderful!)

Blueberry Tart (Tarte Aux Myrtilles)

Blueberry Tart Tarte Aux Myrtilles|thefoodiesway.co.uk This beautiful bake is the culinary find of the most fantastic week skiing in Meribel, France. Blueberry tart, or tarte aux myrtilles as it is known in the French Alps, is a local favourite. These wild blueberries are found in the mountains, and whilst Waitrose didn’t stock quite the same calibre, this tart will still blow your socks off.

I love skiing. Or at least, I love it now. Years of doggedly pushing through tears and terror on the mountains to keep up with my family and Tim have finally paid off. No more screaming my way down the ‘misery run’ for me! Two years ago I had a breakthrough, last year I was keeping up, and this year I felt like I was flying! It is such a wonderful feeling to throw yourself over the edge of the piste and not worry about what is to come as you know you can tackle it. While I am no alpine Goddess just yet, I was rather pleased I could run with the pack this year. I even went off-piste with Tim, I even relished it, whizzing down through powdery, puffy fluff, and ducking and diving through winter wonderland forests.

All that tomfoolery builds up rather a healthy appetite. The snowcapped eateries dotted around the mountain are a welcome sight after a few hours on the slopes, and inside are all sorts of lovely treats. Much like my hot chocolate recipe of last week, the chocolat chaud here are rich, thick and so ridiculously chocolately. Fancy something to take the edge off the fear? Vin chaud is another regular favourite; warming, slightly spiced, and makes you a slightly better skier.

BUT…the sweet stuff here is something else. At the top of the Rhodos lift in Meribel, is a wonderful restaurant serving the most delectable of tarts. Tarte aux myrtilles was devoured by all in our party, and then some more. The creamy creme patissiere, the buttery shortcrust pastry, the sweet yet slightly tart blueberries all come together in one, delicious mouthful. In this tart, the blueberries coloured the creme patissiere the most vivid purple, which is also a feast for the eyes.
