If you read my last post, you’ll know I’ve been truly excited about writing this one. I have recently started ordering a weekly organic veg box from Goldhill Organics, a Dorset farm that has been delivering the most beautiful organic vegetables straight to my door. They also produce a whole lot of other lovely things (fruit, meat and larder) which I can’t wait to try.

There is something ridiculously exciting about waiting for my veg box to arrive, something akin to Christmas day – the receiving of the brown box, the unwrapping and revealing of delicious goodies…it’s such a weekly treat! I have also absolutely loved the planning of recipes using this stunning produce. Goldhill Organics very helpfully publish what’s in the box each week (allowing up to three ‘swaps’) which then leads me into dreaming up delicious gastronomic concoctions.

Creamy, cheesy, herbed, delicious risotto… This is officially one of my all time favourite weeknight dishes. So simple to make, so packed full of punchy fresh flavours and wonderfully indulgent to eat. Perfecto!

In fact, this risotto dish is so good, it can even bag you a boyfriend. FACT. This was the first ever meal I cooked for Tim, and bowled over by my culinary skills, he knew I was a keeper. WARNING: this may lead to lifelong cooking every night forever – just make sure he does the washing up!…

Seafood Spaghetti Napoletana

Seafood Spaghetti Napoletana | thefoodiesway.co.uk Buongiorno! Today, I am floating in Italian seafood heaven…

Do you remember in my last post, I talked about going for lunch with the relatives? (for which I made a rather delicious coffee, cardamon and pistachio cake…) Well, this was more than a little bit exciting for me, as our host, Anna, is a beautiful Italian from Naples who cooked up an authentic Italian feast of epic proportions!

Coming back from slightly hit-and-miss cuisine in sunny Venice, a table spread full of home cooked, Italian family recipes was beyond tantalising. Anna explained that each region in Italy has its own particular style and flavours, and these gorgeous little dishes from Naples didn’t disappoint!

After a refreshing glass of prosecco, we were met with an amazing array of antipasti: baked aubergine with mozzarella, parmesan and pancetta, bruschetta with fried courgette, buffalo mozzarella wrapped in parma ham and stuffed mussels. Every mouthful was packed full of flavour and brought a little bit of sunshine straight from Italy!
