These pecan, maple and cranberry energy balls are the answer to my afternoon-pick-me-up prayers. Whizzing up a batch of these every week has become an essential part of my foodie routine. These tiny balls of goodness are my go-to for a pre-workout boost, or with a hot cup of coffee in the afternoon, when I just need…something.
The juicy cranberries give a tangy sweetness, whilst the maple syrup and nutty pecan flavours sing through. I know this is a rather festive combination as we are about to enter spring, but trust me, they taste so good it doesn’t matter one bit. The fudgy dates and raw cacao adds to the glorious sensation that you are having something naughty, when actually it is wonderfully good for you!
These are fun-sized treats packed with superfoods: almonds, pecans, chia seeds, flax seeds and hemp seeds. The hemp seeds are full of protein which gives you fabulous energy boost just when you need it most.
My dad has put in a request for a batch of these. A definite afternoon sugar-addict, the secret bowl of chocolate treats often beckons, but these pecan, maple and cranberry balls satisfy just the same chocolate craving and are just as delicious! In fact, probably better as they won’t leave you feeling over-indulged but full of energy instead!
And as an added bonus they only take minutes to make: whizz them up in your food processor then store in the fridge for yummy, healthy treats galore!
- 150g medjool dates, pitted (must be medjool)
- 100g dried cranberries
- 100g almonds
- 100g pecans
- 2 tbsp chia seeds
- 2 tbsp milled flax seeds
- 1 tbsp maple syrup
- 1 tbsp hemp seeds
- 1 tbsp raw cacao powder
- Put the almonds, pecans, flaxseeds and chia seeds in a food processor and whizz for about a minute, until the mixture resembles a rough flour.
- Remove the stones from the dates and add to the food processor, along with all the other ingredients. Whizz again until a sticky dough forms.
- Take small amounts of the mixture and roll with your hands into little balls. Place in a tub or bowl and keep in the fridge to harden up, and enjoy!
