Raspberry Souffle + Writing Process Tour

This is quite simply, the best dessert you will ever eat.

What’s even better, it’s almost one of the easiest to make (despite appearances). I have made this dessert on three occasions now, and each time its appearance has been greeted with ‘oohs’ and ‘aahs’ to rival a firework display. It looks impressive and it is; a tall and elegant dish, billowing perfectly as a light and fluffy cloud from its ceramic enclosure. The pretty, pastel pink of the soufflé is enough to delight and raise a smile to even the most nonchalant of your guests. It invites you in, it beckons you to sink a spoon into its snowy, powder-like top and take an irresistible bite.

This soufflé is so incredibly light, it is almost like eating pink air! The tang of the raspberries couples beautifully with just a touch of sweetness, but not too much. It allows the wonderful, natural flavour of the raspberries shines through. To be honest, this soufflé is beautiful by itself without the coulis, but if you fancy an extra kick of raspberries and an adult twist of boozy fruit cordial, the coulis makes an excellent addition. Just make sure you create a hole in the soufflé first before pouring a dash in!…

BBQ Season: Three Pig Burgers

Summer has arrived!

First, I must apologise for my lack of activity in recent weeks. With summer comes report season at school, and I have been drowning in a sea of reports! But now, they are done and dusted and ready and waiting to be sent to expectant parents. Each day ticks another task off the list (sports day, swimming gala, summer production…) and the long, lovely summer holidays beckon!

Balmy evenings, lazy days, flip-flops and BBQs. The UK has been basking in glorious sunshine for the past couple of weeks and here in Dorset I have certainly made the most of it, as you never know how long it will last (the rain threatens while I type away this evening..) One of the first barbecues of the season took place one recent weekend and I decided that this would be the perfect opportunity to try out this delicious looking burger recipe I found in June’s Waitrose magazine. It didn’t disappoint….

Strawberry & Champagne Cupcakes

The votes are in! Those of you who follow The Foodie’s Way Facebook page will be pleased to hear that Strawberry and Champagne Cupcakes were the most popular flavour combination (alongside White Chocolate & Raspberry – watch this space!)

I have to say I was secretly very pleased this flavour came out tops, as any excuse for something bubbly has my vote! Baking and tasting away in the kitchen to create the perfect recipe somehow felt even sweeter with a cold glass of leftover champagne to aid the experimentation!

Now here at The Foodie’s Way, I am very passionate about seasonal ingredients. Yes, it is a little early in the day for British strawberries. But joy of joys, out on a food shop last week British strawberries made a very welcome appearance! They are pretty good already, but I am sure if you decide to make this recipe in full strawberry-season-swing, you will create an even sweeter and juicier cupcake.

In fact, why not time it in with Wimbledon – tennis, strawberry champagne cupcakes and a glass of champagne to go with it…take me there!…
