This is quite simply, the best dessert you will ever eat.
What’s even better, it’s almost one of the easiest to make (despite appearances). I have made this dessert on three occasions now, and each time its appearance has been greeted with ‘oohs’ and ‘aahs’ to rival a firework display. It looks impressive and it is; a tall and elegant dish, billowing perfectly as a light and fluffy cloud from its ceramic enclosure. The pretty, pastel pink of the soufflé is enough to delight and raise a smile to even the most nonchalant of your guests. It invites you in, it beckons you to sink a spoon into its snowy, powder-like top and take an irresistible bite.
This soufflé is so incredibly light, it is almost like eating pink air! The tang of the raspberries couples beautifully with just a touch of sweetness, but not too much. It allows the wonderful, natural flavour of the raspberries shines through. To be honest, this soufflé is beautiful by itself without the coulis, but if you fancy an extra kick of raspberries and an adult twist of boozy fruit cordial, the coulis makes an excellent addition.
