BBQ Season: Three Pig Burgers
Serves: 8 burgers
  • 200g pancetta, diced
  • 1 medium red onion, chopped
  • 500g pork mince
  • 400g pork sausages
  • 100g soft white breadcrumbs
  • 1 egg
  • 1 tsp chilli flakes
  • handful each of parsley, dill and chives, chopped
  1. Put the pancetta and onion in a frying pan and heat. Cook for about 10 minutes until the onion has softened. Put into a large mixing bowl and leave to cool completely.
  2. Once cool, add the pork mince to the pancetta and onion bowl. Squeeze the meat out of the sausages, add to the bowl too and discard the skins.
  3. Add all the remaining ingredients to the bowl, season and mix well.
  4. Split the mixture into 8 equal parts and shape each into burgers. Cook on a hot BBQ for 5-10 minutes on each side, until cooked through.
