Apple and Cinnamon Loaf Cake
Serves: 1 9x5 inch loaf tin
  • 65g Demerara sugar
  • 1 tsp cinnamon
  • 130g golden caster sugar
  • 115g butter
  • 2 eggs
  • 1½ tsp vanilla extract
  • 210g plain flour
  • 1½ tsp baking powder
  • 115ml milk
  • 2 eating apples, peeled, cored and chopped
  1. Preheat oven to 175 deg C. Grease and flour a 9x5 inch loaf tin.
  2. Mix together the Demerara sugar and cinnamon in a small bowl.
  3. Beat the golden caster sugar and butter together in a separate bowl with an electric mixer, until creamy. Beat in the eggs slowly, one at a time. Add the vanilla extract.
  4. Sieve together the flour and baking powder in a bowl; stir slowly into the butter and sugar mixture. Now add the milk and stir until smooth.
  5. Spoon half the cake mixture into the prepared loaf tin. Sprinkle over half the apples and half the Demerara sugar mixture.
  6. Spoon the remaining half of the cake mixture into the tin. Top with the remaining apples and Demerara sugar mixture. Pat lightly down.
  7. Bake in the oven for 40-50 minutes, or until a skewer inserted in the centre comes out clean.
